I've made a dentist, dermatologist, and EYE appointment for this coming month. I'm going to be all healthy in exactly 27 days!!! It feels great. Now I just need to remember to go to all of these appointments. I'm a bit nervous about two of them. Not so much the eye appt because I've never really had problems with my eyes....yet. Yet is exactly what the receptionist on the phone told me too. Maybe she is psychic and knows something that I don't know.
Either way, I'm on to cook my mom's famous tacos!
Here is a recipe for my famous dip! It is a hit so try it out at your next get together.
Warm Feta and Artichoke Dip:
Ingredients:
* 1 can (14oz.) artichoke hearts, drained and finely chopped.
(I like the ones marinated in water because I feel like they aren't as slippery when chopping them up. This could prevent you from losing a finger!)
*5 oz. feta cheese, crumbled
* 3/4 cup of mayonnaise or miracle whip
* 1/2 cup of freshly grated parmesan cheese
* 1 jar (2oz.) of pimientos, drained and diced
* 2 tsp. minced garlic
Directions:
1. Preheat oven to 350F
2. In a bowl stir everything together and then transfer into a small casserole dish.
3. Cook uncovered for 25 minutes or until lightly browned
I served this with bagel chips and Stacy's Simple Naked Pita Chips.
SOOOO GOOD!! I even had the leftovers two days later and it tastes just as amazing as when I pulled it out of the oven.
